A Savoury Feast for all sized gatherings

 


The nights have definitely drawn in and it's time to start really thinking about something to celebrate, lots of us need a little or indeed a lot of festive cheer to be brought to the table in 2020


Here at Marsh Pig we start producing for Christmas way back in April, Charcuterie isn't something you can rush and nor is the rearing of the free range pigs we use.

We get our pork from ‘The Rare Breed Meat Company’ who have 3 of their own gloucester all spots farms and also pull in from smaller free range pig producers around East Anglia. We particularly love the Large Blacks from Scottsfield Pork, Robert Simonds as the same passion for heritage breeds as we do, amazing quality, and fantastic sweet taste.


Free range pigs are reared for around 8 months as opposed to 5 short months for pork labelled ‘British Pork’ which is indoor reared and never sees light of day. Our pigs roam freely in fields, where they have access to food, water and shelter at all times.


Our Free Range Charcuterie is in no rush to be ready either, but that is where the flavour really stands out, it take a minimum of 12 weeks to produce our amazing award winning Coppa and our Bresaola takes a similar amount of time, using only local rare breed beef at has been aged before we get our meaty mitts on it and marinade it in rosemary, thyme and juniper to bring out the earthy rich flavour. Bresaola can be beautifully paired with parmesan shaving and drizzled with a good extra virgin olive oil to make a very stress free starter on Christmas morning.



No matter 2020 Christmas and New Year will be a more intimate affair and therefore even more reason to have some luxury to share on the table.
